California Toast



You may have seen, from my Instagram story over the weekend, that A Couple Cooks hosted a dinner party to celebrate the release of their new book. I would HIGHLY recommend it. If you are wanting to cook healthier, but not super complicated, but definitely super delicious, this is your book. I think I’ve made just about every breakfast recipe, including this California toast. I am not a big almond butter fan. I have a serious relationship with peanut butter, but I decided to branch out. I’m sure PB would be just fine here, but I thought I would just go with the recipe. I’m seriously glad I did. It’s fantastic. This toast is heartier than just normal breakfast toast. You get the healthy protein from the almond butter, and some super antioxidants from the berries. A hint of sweet from maple syrup. Not too sweet, it’s literally just right. It keeps you feeling satisfied and not the least bit guilty for overindulging in breakfast. Don’t get me wrong, I love all the breakfast foods, but I’ve found that the sugarier the item the worse I feel. (that’s almost a duh!) I love avocado toast and that’s fairly normal for me for breakfast, but this change in routine opened my eyes to an avo-toast alternative. I’ve made it a lot since I got the book in the mail and I am not ashamed to admit it. If you are looking for an AM change of pace, definitely try this out.

All you need for this recipe is

2 slices Whole Grain Toast
Almond Butter
Blueberries, Strawberries, Raspberries, Banana slices
Maple Syrup

First make the toast. While the toast is toasting, rinse the berries, slice the strawberries and banana. Once the toast is toasted, spread with almond butter. Sprinkle with cinnamon. Top with some berries and banana slices. Tope with a drizzle of maple syrup. That’s it!
