{Thirsty Thurs-yay} Passion Fruit Cocktail


Thirsty Thurs-yay! It’s a good day for a cocktail. Is that an appropriate thought for the morning? Anyway, this drink is where it’s at. I had recently traveled to NY and had lunch at Eataly. There, I had the pleasure of meeting the BEST drink I’ve ever had. You’d think that I would remember the name, but of course I don’t. But what I did remember was the refreshing combination of flavors. Basil, passionfruit, blood orange. So, I recreated this boozy version of the best drink ever. I made a passion fruit simple syrup which was super easy and something you could add to sweeten iced tea, or mix a bit with some sparkling water…and muddle some basil into that. I will say was a bit hesitant to try basil in a drink. This is coming from someone who it literally obsessed with basil. But, I was pleasantly surprised (shocker).


  1. *For the simple syrup, combine 1 cup water, 1 cup sugar and bring to a boil. Whisk until sugar is completely dissolved. Add in 1 c passion fruit pulp (about 6 passion fruits) and let simmer for about a minute more. Strain the liquid and let cool before using.
  2. For the drink, add simple syrup and basil leaves to a measuring cup and muddle together until the leaves are bruised and fragrant. Stir in the orange juice, lime juice and rum. I recommend tasting the mixture here. You can always add more syrup to sweeten it a bit if you prefer a sweeter cocktail.
  3. Using a lime or orange, rub the rim of each glass and dip in sugar. Divide the juice mixture among 4 glasses, filled with ice. Top off each glass with some sparkling water (to taste), and garnish with additional fruit or basil leaves.
